Salmon is a high-protein meal which has selenium, niacin, phosphorous, magnesium, high vitamin D, vitamin B6, B12, omega-3 fatty acids such as DHA and EPA. The natural color results from carotenoid pigments, largely astaxanthin but also canthaxanthin, in the flesh. Salmon gets these carotenoids from eating shellfishes.
